Vanilla Butter Cookies – ideal for baking with kids

Vanilla Butter Cookies - ideal for kids

There’s only one recipe left in my birthday countdown, and this one is dedicated to my sister. When I was a kid, I got this little baking book for children, and even though it had quite a few recipes in it, I always ended up making either the ‘sand cookies’ or (most of al) the butter cookies. They were so simple but delicious to make and you didn’t need your parents to help you out, apart from the oven. I can’t even count the amount of times I made those cookies with my friends! When my sister was growing up then (there’s an 8 year age gap between us), we often made these cookies as well – or better yet: she would ask me if we could bake cookies together and then when I started on them she was nowhere to be found, only to reappear when they were done. Clever kid!

Either way, many years later we cooked together quite a few times, no longer the cookies though but recipes like our Chicken Pad Thai, or many pasta recipes. It’s not as easy to cook together anymore with me living in a different country, but every time I go home I look forward to spending some time in the kitchen with my sister, who always introduces me to some really good new recipes and ideas!

Back to the cookie recipe now: if you have a kid running around the house, or have any nephews/nieces that might be into baking: this recipe is really fun, easy and delicious for everyone to enjoy!

Makes: about 20 cookies

  • 150g unsalted butter
  • 100g granulated sugar
  • 1 egg
  • 200g plain flour
  • 8g – 1 small sachet of vanilla sugar

Whip the butter until creamy (you can use a stand mixer, wouldn’t recommend doing it by hand). Then add in sugar, vanilla sugar and egg. Mix well, then gradually add flour.

Now that the batter is ready, either line a baking tray with non-stick baking paper, or butter it up lightly. Scoop out a little dollop of bater and place on the baking tray. They will melt down a bit so don’t make them too big or too thin. My best advice is to try one before making them all, to find the perfect size.

Bake at 175°C for 10 minutes.
