#AD Being an expat often means having to miss out #AD Being an expat often means having to miss out on a lot of family moments in general, but this year I’ve had to miss quite a few that I never expected to miss. I am so relieved though that I get to spend Christmas with my family, and that I can share this bottle of @santaritaireland with my brother & his girlfriend who got married and became parents to a beautiful little girl since I last saw them.

Thing have been very quiet on my blog and IG latel Thing have been very quiet on my blog and IG lately.. and that’s because my fiancé and I decided to go around Australia in a campervan before flying back to Europe this Sunday! We figured a campervan was the safest option and we’ve had nearly no contact with people the past 3 weeks which is so crazy! We were lucky enough to have left Victoria before things got hectic down there and are so grateful we got to explore NSW & Queensland a bit more before leaving this country. I honestly never thought I would like it here as much as I did but unfortunately due to the pandemic my tourist visa is about to run out and can’t be renewed which means it’s back to Europe for us! I have so many stories to share with you all though and a few more recipes too and I’m also looking at rebranding my blog a bit, but we’ll see. For now I’ll leave you with a shot of me walking down what still is my favourite spot in Australia: Palm Beach! (If you’re a @homeandaway fan: this is where they film it!)

But as we’re going into our last month here in Australia I wanted to try and make as many recipes as possible before we head back home. So when I saw this bag of chestnuts during my weekly market shop, I couldn’t resist. I had eaten roasted chestnuts before, but I had never actually made them. Roasting chestnuts is really easy to do, but you have to be careful when cutting them as well as peeling them after they come out of the oven. Recipe on myemeraldkitchen.com

We are so excited that we get to travel around the place a bit more before heading back home to Europe in July. We’re heading home a lot sooner than we had planned, but what a trip it has been! Although I’m not a travel blogger, I might write up a few of our roadtrips we did once we’re back home. But for now, it’s time to celebrate with some chewy double chocolate chip cookies !

What were some of the food items that were sold ou What were some of the food items that were sold out in your country when COVID-19 restrictions began? Over here in Australia it was yeast, flour & rice. Luckily I always have rice & flour in my pantry, but I hadn't bought yeast yet since arriving in Oz so I was in a bit of a pickle when my fiancé and I decided to make our own pizza. We either had the option of buying ready-made bases (which was never a great success in the past) or going for a yeast-free but homemade pizza base. We ended up going for the yeast-free base and didn't regret it for one minute!

It’s been an absolutely hectic week for me last It’s been an absolutely hectic week for me last week and I just could not find the time to share this recipe with you all so to make up for it I’ll be sharing 2 new recipes this week. First up is this delicious dinner of Lamb chops with boiled & grilled artichokes, aubergine & radicchio. Recipe on myemeraldkitchen.com!
Artichokes are quite an underrated ingredient in m Artichokes are quite an underrated ingredient in my opinion. They do require a bit of work, but you mostly need a lot of them to get a good meal out of them as more than half the artichoke isn’t edible (or well, not pleasant to eat). But they are so delicious & healthy so hopefully this recipe will encourage more people to give them a try!

The other day though we drove by the @Kingstonfoodhangar and decided to do our grocery shopping there & in the Tasman butchers next door. As we were browsing the fresh food section I saw these artichokes and I just got so exited that I ended up buying a few of them. There’s a few ways you can cook them, I previously boiled & stuffed artichoke. This time around I’m also boiling them, but after slicing them in half and removing more leaves. Once they are boiled we’re going to grill them in some olive oil & rosemary.

You can eat these as a snack or appetizer with a nice dip, or you can use them as a side dish for your dinner – I’ll share a new recipe using them as a side dish next week!

As you know, chocolate mousse can be tricky to make as there are a few things that can go wrong with the egg whites and the cream. However, if you follow my simple tips you should be able to create the perfect mousse. The tim tam tarts themselves are super easy, all you have to do is pick your favourite tim tams! And for those who’ve never been to Australia: @timtam is an Australian brand of chocolate biscuit that consists of two malted biscuits separated by a light chocolate cream filling and coated in a thin layer of textured chocolate.
