The other day I was strolling through the supermarket when this bright orange fruit caught my eye. Ireland isn’t the easiest country to get foreign fruits and veggies but somehow persimmon popped up in the shops and I am so happy about it! I first discovered this fruit about 2,5 years ago, when one of my colleagues at the time brought it to work. I haven’t seen it around all that much ever since so apart from a persimmon – yoghurt smoothie, I hadn’t been able to create a new recipe with it.
Now that persimmon has found its way back into my life, I have gone for another very easy but yummy and healthy recipe: a persimmon – citrus juice. It’s an excellent vitamine boost, especially when combined with oranges and lime. Persimmon itself is a good source of Vitamin A and C, but it also provides Vitamin B1, B2 and B3. It also has the added bonus of helping with weight loss, preventing cancer, helping your digestive system, improving your immune system and providing natural energy.
Makes: 2 juices
Ingredients
- 2 persimmon fruits (also called kaki fruit)
- 250g freshly squeezed orange juice
- 1 lime
Tip: depending on the size of course, you’ll need about 3 oranges
Preparation
Peel the persimmons, slice the oranges and lime in half and get your juicer or blender ready. I don’t have a juicer myself so I simply put the persimmon in the blender, used a manual juicer for the oranges and squeezed the lime by hand and added their juices to my blender and then mixed it all together. Best consumed right away, it can stay fresh in your fridge for a little bit but there’s nothing like a freshly made juice.
